Goat Cheese & Cherry Bruschetta

Fresh cherries are one of my favorites, and I love goat cheese, this with a rosemary infused honey OMG delish!

Goat Cheese & Cherry Bruschetta

Ingredients:

1 loaf baguette or ciabatta bread

1 box fresh cherries pitted and cut in half

8 ounces good quality goat cheese

1/2 cup honey

1/3 cup water

a couple sprigs of fresh rosemary

3 1/2 tablespoons balsamic vinegar

fresh rosemary for garnish and presentation

 

Instructions

Preparation:

In a small sauce pan over medium-high heat, combine honey and water; bring to a boil. Add rosemary sprigs and reduce heat to a simmer. Let simmer for approximately 10 minutes until total amount of liquid is reduced to about 1/2 cup. Remove from heat and discard the rosemary.

Stir in balsamic vinegar and let cool.

Pre heat the BBQ grill. Drizzle a little olive oil on the bread and grill just a few minuted to get toasty and some grill lines.

Spread goat cheese on grilled bread Top with sliced cherries. Drizzle with balsamic-honey syrup, sprinkle with fresh rosemary and serve.

You can also prepare this with any fresh fruit in season from the farmers market…
