Air Fryer Salmon

This air fryer salmon is just so easy and delicious. Just season with a Cuban rub, spray with a bit of olive oil and cook for eight minutes. I used Skuna Bay Salmon that I purchased at King Soopers. Read a little bit about the salmon https://www.skunasalmon.com/our-story

Time to make the rub:

Cuban Rub

1 tablespoon annato seeds crushed (Penzeys)

1 tablespoon onion powder

1 tablespoon garlic

1 tablespoon oregano

1 tablespoon cumin

1/2 to 1 tablespoon cayenne

2 teaspoons salt

1 teaspoon pepper

1 tablespoon coconut sugar

Pre heat your air fryer to 400*

Mix all your seasonings together in a small bowl. Store in an airtight container. Just take a little portion of the rub out to season your salmon. You have enough rub for cooking and grilling a few times. If you double dip in the main container you have contaminated it and will have to throw the leftovers out. Season your salmon and place on a rack in the air fryer that has been sprayed with olive oil, give the salmon a spray with olive oil also. Cook for 8 minutes. No need to turn, and you can leave the skin on for the cooking. Open the fryer and check your salmon. If you like medium rare, you might even give it a check at 6 minutes. If you like it more done you may cook it a minute longer. But keep in mind if you are working with quality salmon it would be a shame to over cook it.

I served my salmon with a 6 minute Instant Pot Risotto. Try this recipe minus the parmesan crusted egg https://bellabistro.com/instant-pot-spring-risotto/

Sicilian Seasoning 1 tablespoon garlic powder, 1 tablespoon onion powder, 1 tablespoon dried basil, 2 teaspoons sea salt, 1 teaspoon black pepper, 1/2 teaspoon crushed red pepper, 1 teaspoon lemon zest

Keep in mind once the timer goes off on your risotto, you must do a manual release immediately. If you do not your risotto will become over cooked and mushy.
