Air Fryer Stuffed Sole

I just love when a thought, idea, plan and recipe come together! As I was shopping this week I picked up some Dover Sole just because it looked good. It was a filet just under one pound, so it was perfect for just my husband and I. I really had no idea what I was going to do with it when I purchased it.

All of you have seen that I have been cooking a lot, I mean a lot and posting photos, writing recipes. And then there are some evenings that I am just tired of cooking, just like you all and I am looking for something super easy. Those evenings what I want my biggest challenge to be, is getting that bottle of wine open and into my glass. So with my glass of wine in hand, I open my pantry and my fridge and checkout out my ingredients. When I saw the prosciutto, I thought hmmmm who does not love prosciutto wrapped on everything?

Here are my Ingredients that served two:

  • 1 large dover sole that I cut in half
  • 4 slices of prosciutto
  • 2 small handfuls of spinach
  • 2 tablespoons of pinenuts
  • 2 tablespoons of sun dried tomatoes
  • 2 teaspoons of capers
  • 1/2 a lemon zested
  • 2 tablespoons bread crumbs
  • salt & pepper
  • spray oil
  • butter optional
  • lemon slices for garnish

I cut the dover sole in half, then very lightly pounded it, to make it thinner and more even. Do this ever so gently fish is delicate. You may use any type white fish that you like. Season the fish. Lay each fish filet on top of two slice of prosciutto. Scatter some spinach leaves, sprinkle pine nuts, sun dried tomato, capers, lemon zest and then bread crumbs. Start rolling from the long side of the fish. You do not have to roll is real tight. At this point you can place a tooth pick in to hold the roll together, you may use kitchen twine, or you can be like me and not use either.

Preheat the air fryer at 375* for at least 5 minutes.

I like to use my grilling tray that came with the air fryer, this makes the fish sit up higher to the heating element to get more color and crisp up the prosciutto. Spray the grilling tray, lay the fish seam side down on the tray and spray with oil. I use a misto with my air fryer and just fill with olive oil. Close the air fryer and cook for 6 – 9 minutes, depending on the size of your fish roll. I checked mine at 5minutes, then I decided to throw some asparagus in also.

As you can see I just scatter the asparagus around. I give them a spray of olive oil, season them with salt and pepper and let everything cook for 3 more minutes. You can actually do the touch method and feel the fish roll. As it cooks it becomes firmer to the touch. I did not turn my fish roll I wanted lots of color and crispiness on my presentation side. You could easily turn half way through the cooking process.

After the cooking was complete I added some thin slices of butter on top and let them melt as I was getting ready to plate. On the plate this is one fish roll sliced in half at an angle. You could serve this dish with cauliflower rice, small orzo pasta, spaghetti, zucchini noodles any type of grain.
