Pork Saltimbocca with Whipped Cauliflower

This is a keeper! Awesome flavors.

You will need prosciutto, pork loin thinly sliced, asparagus, cauliflower, green onions & sliced almonds.

On a clean work service lay out a slice of prosciutto, top with a thin slice of pork add 3 to 4 asparagus spears. Season with salt & pepper and roll up. It does not get much easier then that.

I like to use a grill pan, so you get your pan hot. Spray with olive oil and place your meat rolls on the pan. Cook until all sides are nice and brown. Since the meat is sliced thin is does not take long, about seven minutes or so.

Trim your cauliflower so you just have the florets, boil in water or stock until tender. Drain and place into a food processor with a tablespoon or two of melted butter and warm coconut milk. Pulse a few times until pureed. Season with salt & pepper and you have whipped cauliflower. Garnish with sliced almonds & chopped green onions.

Also try using chicken, turkey and veal.
