Prosciutto/Egg Cups

Day 14 of my Whole 30 Challenge and I am famished! In need of good food in my belly…

Lightly oil a large muffin tin with olive oil. Line the muffin cup with thinly sliced prosciutto.

Rough chop arugula or spinach and place in cup. Add sautéed mushrooms and peppers. Crack an egg into each cup.

Pour a little coconut milk in, season with salt & pepper.

Bake at 375°F for 20 minutes or until egg is set.

Those who can have cheese, add some grated Parmesan after the veggies.
