Citrus & Avocado Salad

This salad is great, you can use what ever citrus is in season and that you can find in the market. You can switch up the nuts, seeds and cheeses. Try some raw unsweetened coconut.

Ingredients

Salad

Mixed greens, spinach or arugula

3 oranges, cara cara, blood red, grapefruit  your choice

1/4 red onion thinly sliced

1 avocado

1/2 cup marcona almonds, pepita seeds, sunflower seeds or pistachio’s

3/4 cup goat, feta or blue cheese cheese

Vinaigrette

1/4 cup champagne vinegar

1 teaspoon dijon mustard

1 teaspoon honey

salt & pepper

3/4 cup extra virgin olive oil

Instructions

Place greens on salad plate, place slices of citrus and avocado. Sprinkle with nuts or seeds, garnish with cheese. Drizzle with vinaigrette.

In small mixing bowl measure the vinegar, add the dijon, honey, salt & pepper. Whisk to blend, slowly incorporate the olive oil continuously whisking. 

Can store in the refrigerator for up to two weeks.

Notes

I have also served this salad with grilled shrimp, its beautiful and tastes really great.
